For example, although most people are unaware of it, the altitude at which the tea plant grows is one of the fundamental parameters affecting the taste, aroma, astringency, and even color of the tea we drink. Altitude determines the character of the tea.

How does altitude affect tea?
Flavor:
At higher altitudes, the air temperature is lower. This prolongs the photosynthesis process, meaning the tea plant grows more slowly and patiently. The result? Leaves that accumulate a more intense aroma and nutrients.
In short: High altitude means an intense and refined flavor.
Sourness
At high altitudes, the temperature difference between day and night increases. This difference affects the balance of polyphenols (antioxidants), tannins, and amino acids that are naturally present in tea.
- Tannins determine the bitterness of tea.
- Amino acids provide sweetness and body.
This balance creates that pleasant aftertaste that lingers on your palate when you drink your tea.
Aroma
Tea leaves grown in a cooler, more humid environment develop more aromatic components. This gives the tea a characteristic and layered aroma. Each altitude gives the tea a distinct identity, a distinct spirit.
Therefore, the choice of which altitude the tea grown at will be used is a design preference determined by what kind of tea is envisioned in the final product.
